How Much Acid Is In Coffee?

A regular cup of coffee has a pH balance between 4.85 and 5.10.

As you probably recall from chemistry, acidity is measured on a pH scale that ranges from 0 (most acidic) to 14 (least acidic).

A pH of 7 is neutral (regular water), so with a pH between 4.85 and 5.10, regular coffee is fairly acidic.

What Makes Coffee Acidic?

Coffee beans naturally contain a number of different acids. The acids and their ratios are determined by the bean’s country of origin, the climate, elevation, and the type of coffee bean.

Generally, coffee grown at low altitudes is less acidic, while coffee grown at high altitudes is often higher in acid content.

What Acid Is In Coffee?

Coffee beans contain two main types of acids – organic acids and chlorogenic acids.

Organic acids are considered good acids because they’re the source of the fruity notes that coffee drinkers love. The organic acids found in coffee are:

  • Malic acid – this is the acid found in green apples.
  • Citric acid – with this one, you get the taste of lemons and oranges
  • Tartaric acid – this acid is mostly associated with grapes and wine but is also found in bananas.
  • Acetic acid – gives vinegar its sour taste

Based on where and how the coffee berries were grown, you’ll get different combinations of these acids in the final product.

But besides the “good” organic acids, there are also chlorogenic acids, which break down during roasting and have a bitter and sour taste.

How To Make Regular Coffee Less Acidic?

There are a few different tricks coffee lovers can use to make their coffee less acidic.

  • Use the cold brewing method
  • Add some milk or cream
  • Choose dark roasts over lighter roasts
  • Adding baking soda or salt
  • Change your grind size

Use The Cold Brewing Method

Making cold brew coffee instead of hot brew is one way to make a lower acid coffee.

According to a scientific study published in 2018, there’s evidence that cold brew coffee is less acidic than hot coffee. This is because hot water tends to extract additional acids than cold water.

For example, the study found that Mexican coffee samples brewed with hot water had a pH of 4.95. However, the cold brew Mexican coffee had a pH of 5.08.

While this may not seem like a huge difference, remember that the PH scale is logarithmic; meaning that a pH of 4.0 is 10 times stronger than a pH of 5.0. So, even though the differences may appear small, it actually makes a big difference in the overall acidity.

Add Some Milk Or Cream To Your Coffee

Adding milk or cream to your coffee can really reduce acidity.

The pH balance of regular coffee is around 4.85 to 5.10. So, a full cup of black coffee will naturally be acidic.

However, the pH balance of milk is between 6.7 and 6.9. So, by diluting your coffee with milk, you can make your coffee less acidic.

If you can’t have regular milk, plant-based milk it’s a great option. Almond milk is one of my favorite options for my morning cup.

Choose Dark Roast Coffee Beans

Heat breaks down some of the acids in coffee. So, the longer and darker the beans are roasted, the less acid they will contain.

In fact, by roasting coffee at a lower temperature for an extended period of time, the bean’s chlorogenic acid can be reduced by nearly 50%.

The problem some coffee lovers may have with this is that as the acids are destroyed, the coffee’s flavor becomes more bitter. (Which is a flavor common to dark roasts).

So, if you’re sensitive to acids, try switching from light roast to medium roast. Or from medium roast coffee to dark roasted beans.

Add Baking Soda Or Salt

Another option for reducing the acidity in your coffee is by adding a bit of baking soda or salt.

Since baking soda has a pH balance of around 8, just a pinch or two can help you if you suffer from acid reflux.

Salt is another option for helping you with low-acid coffees, but this one works in two different ways. First, salt is neutral on the pH scale, so adding a bit will decrease your coffee’s acidity.

Also, salt is very good at cutting bitterness. So a second option is to get a darker roast than normal (which is less acidic, but more bitter) and to cut the bitterness with a pinch of salt.

Change Your Coffee Grind Size

Coarsely ground coffee allows fewer acids to be extracted than finer ground coffee. The reason is that a mound of course grinds has a lower surface area than a mound of fine ground coffee.

If you have a drip brewer, consider brewing with a larger grind size to get a less acidic coffee. Or try immersion brewing with coarse grinds to get a lower-acid coffee as well.

Low Acid Coffees – The Bottom Line

If your morning cup of joe puts you in a world of hurt, you may have too much acid in your coffee.
